The reason why you only use one camera for the action is because if it is two, you have to zoom out to see the effect of the second camera’s lens on the action, which is unnatural to the viewer. Also, it seems to be a little more difficult to do so in slow motion. In fast motion, it is easier to focus on the action.

I can’t really say for sure that this isn’t just a one-time thing. It seems like there was a trend in the last few years of developers making games in the same style. Maybe it’s that they realized there is no way to ever make a game look like a movie. Also, I’d imagine that the only way to make a game with this type of camera composition would be if the camera was moving while the players are moving.
